The official Mjito song might not be everyone's taste but I never met anyone who didn't love a well mixed Mojito.

It certainly is one of the classic cocktails you can find on menus all around the world but there are so many recipes that you'll hardly find any two that taste the same. The basics are the same, white rum, mint, lime and sugar - but there are so many variations, brown or white sugar, fresh lime or juice, add Angostura bitter or not, crushed or ice cubes etc. Just toy around with the basics and you'll soon find your favourite.

This recipe here was created by a good friend of mine from Italy and he mixed it so often that we started to call him Mr. Mojito! I hope you enjoy it as much as I do every time I fly over to Milan to visit him.

For the perfect Mojito you need:

* 2 ounces White rum (Havana rum)
* 2 ounces Soda water
* 5 Mint leaves
* crushed ice
* 1 lime
* 1 teaspoon sugarcane sugar

This is not the original recipe which uses lime juice instead of the limes and white sugar instead of the sugarcane one. So if you don't have fresh limes you can easily substitute it with lime/lemon juice and use your normal sugar. But it's worth making the effort, the fresh lime gives it an extra kick and it looks much nicer in the glass. Brown sugar is always my sugar of choice and I think it fits a lot better to this cocktail than ordinary white sugar; it also stays crunchier for longer and you'll have this amazing feeling of sweet sugar crystals mixed with tiny bits of mint leafs on your tongue.

* put 1 tablespoon of brown sugar in a glass
* quarter the lime and add it all to the sugar
* crush the lime till all of the juice is out
* add the mint leafs (washed, not chopped) and crush again for a few seconds
* pour the rum in
* top up with soda water - this is optional, if you prefer a strong drink add 1 ounce more rum and forget about the soda water
* add crushed ice
* stir well
* top with a teaspoon of brown sugar

And in front of you you'll see the perfect cocktail, sweet and sour at the same time with refreshing mint as a bonus. What more can you possibly ask for?
