I’m writing this opinion not because I think all you clever people out there using dooyoo are stupid but because of my appalling experience in pubs. What is so wrong with ordering a simple cocktail in a public house? Nothing you would think, especially when they boast cocktail nights once a week.

Therefore, for the benefit of the Scottish public houses, here is my list of favourite cocktails.

Tequila Sunrise

If you sell grenadine, you should be able to make a Tequila Sunrise. What else are you going to use it for eh?

Ingredients

1 - 2 shot(s) tequila
1 small bottle of orange
A splash of grenadine

Method

Pour the tequila and orange into a glass, add ice if desired then pour a little grenadine over the back of a teaspoon and it will sink to the bottom and make a sunrise effect, don’t add too much. It’s easy; I’ve even managed it when I’ve been drunk, so why can’t pubs get it right?

Sea Breeze

This one is ubiquitous now.

Ingredients

2 shots vodka
3 measures cranberry juice
1 measure grapefruit juice
Wedge of lime
Loads of ice

Method

Chuck all of the above into a glass, squeeze the lime then chuck the wedge in too. If you’re clever you can layer it but it tastes nicer mixed anyway. You can substitute the vodka for gin if you feel so inclined.

White Russian

Ingredients

1 shot vodka
1 shot kahlua
2 shots of cream

Method

Mix all of the above in a small glass. Lethal yet tasty. Never substitute the Kahlua; it’s much nicer than Tia Maria. (If you omit the cream or wimp out and mix with coke this is a black Russian.)

Singapore Sling

(Not the original Raffles recipe but the recipe made by most cocktail bars)

1 shot gin
1 shot cherry brandy
juice of half a lemon
><br>1 shot pineapple juice
2 – 3 shots soda water
slice orange
marachino cherry

Method

Mix all of the above in a highball glass, sip elegantly through a straw. ;-)

Harvey Wallbanger

1 shot vodka
1 shot Galliano
2 –3 shots orange juice

Method

Mix and serve over ice. If the vodka is replaced with tequila, this is a Freddy Fudpucker.

Right, all you publicans out there, I’ll be expecting you to have learned those simple recipes for next time I frequent your establishments.

I made a cocktail for my neighbour using two shots of vodka, one of grenadine and some lemonade. She said she wanted something red, and grenadine is about as red as you get. Another alternative is a 'bloody brain' where you have a shot of archers, one of baileys (not layered perfectly so it looks likes brains) and a few drops of grenadine on top. Fantastically gruesome.

At least the barman had a book. Sometimes they don't know how to make a cocktail in bars and get very angry with you if you suggest they should have a book of recipes at hand.
