Here are a few idea's for non alchoholic drinks, these are favorites of mine to keep in the fridge for a refreshing drink, or to be served chilled for a change to your normal drinks.

1. Moroccan Mint Tea

1 and a half tablespoons of green tea
A few sprigs of Moroccan mint, other mints work just as well though if you haven't moroccan mint.
5oz of sugar ( 150g)
1 and a half pints of boiling water.

Put the green tea into the pot and pour on a little boiling water.
Swirl it around and pour off the water keeping the tealeaves in the pot. This is to get the dust off the tealeaves and it takes away a bit of the bitterness of the tea.
Add the sprigs of mint and the sugar, then pour on the boiling water.
Leave this to for about 5 minutes, making sure you push down any bits of mint that have floated to the top of the pot.
Serve with sugar if required in small glasses.
You can drink this hot or cold and its very good for your digestive system.


2. Mango Frappe

16floz of water (500ml)
70z of sugar (200g)
3 ripe mangoes
juice of 1 lemon
sprigs of mint

Make a syrup by boiling the sugar and water, peel and chop the mangoes,then blend them to a puree in a blender.
Add the lemon jiuce and freeze the frappe untill it is almost solid.
Don't let it freeze beyond the pouring stage, then pour into small glasses.
Crush the mint with a wooden spoon and add it to the glasses and serve.


3. Pineapple Cup

1 large pineapple
1 pint of syrup, made like in the frappe
juice of 1 or 2 limes depending on taste.
1 litre of sparkling water.
sprigs of pineapple sage.

Take the syrup and bring it to the boil, chop peel and puree the pineapple.
Add the lime juice to the syrup mixture along with the pineapple puree.
Leave to cool then chill in the fridge, add the sprigs of pineapple sage (optional)
Serve in small glasses.


This are all easy to make recipes and are nice for a change on a hot day, or if you just fancy making something different, I hope you enjoy them.

Lovely. Although I'd be tempted to freeze the second two a little longer and make a sorbet and serve as a light summer dessert.
