Lyles golden syrup.

Whenever I see the green metal tin with a picture of a golden lion on it sleeping under the golden arch my thoughts are taken to winter and Christmas.
Winter breakfast porridge sweetened with a spoonful of sweet liquid gold. Winter evenings coming in from the cold fingers tingling to eat Sponge treacle puddings with the sweet syrup beneath.
Ginger cakes, gingerbread men, and gingerbread houses all are Christmas treats.
If you warm golden syrup a little it will pour out quicker and more easily. Warm a spoon up in a mug of warm water to make it easier to spoon the syrup out of the green tin. Lyles also market this syrup as pouring syrup in a plastic squeasy bottle.



Thinking of Gingerbread men made lovingly by the children of the family for treats for grandma or to hang on the Christmas tree. Magical Gingerbread houses on the Christmas table.

Abraham Lyle makes golden syrup and son make in England first in 1883.Golden syrup is a by-product of sugar refining.

First of all open the lid its difficult use a knife to prise it open but mind your fingers.
Here dip your spoon into the tin and try and catch the gold isn’t it glorious a thick liquid that pours slowly from your spoon always leaving some stuck to the bowl of the spoon. It runs of your spoon a golden colour that glistens and gleams a glorious sight in the sun. Yes now you may lick the spoon mmmmm so sweet, a wonderful sweet nutty taste, no come on you cant eat any more it will make you feel sick and I need it to make gingerbread men for Christmas if you are good mumsy will let you lick the spoon when she has finished.

Here is the recipe for ginger bread men.

75g/3oz brown sugar
2tablespoons golden syrup.
1 tablespoon black treacle
I tablespoon water
95g/31/2 oz margarine butter.
1 level teaspoon cinnamon
1level teaspoon ginger
Grated rind of 1/2 orange
˝ teaspoon bicarbonate of soda
225 g / 8oz plain flour

Put sugar, syrup, treacle, spices and rind in a large saucepan.
Bring them just to boiling point stirring continuously. Then remove from heat. (If you leave it boiling too long it will turn into toffee (mmm treacle toffee))
Stir in the fat that you have cut into small lumps.
Stir in the bicarbonate of soda.
Now stir in the flour until the dough is smooth and manageable.
Leave the dough to cool for about ˝ hour

Now is the fun bit roll the dough out on a floured surface to about 3mmthick (1/8 inch) the dough can now be cut into gingerbread men with a cutter. You could make gingerbread snowmen gingerbread Christmas trees oh any shape you fancy.
For the mens features use currants for eyes, nose, mouth, and buttons.
Bake the biscuits in the oven at 180 c 350 f for about 10- 15 minutes when the men will feel firm when lightly pressed. Turn them on to a cooling rack. When cool they can be decorated in anyway you like icing a scarf for snowman and sprinkling white icing sugar on him. Silver and coloured icing decoration balls make good décor for the gingerbread tree. Use your imagination.

These make great gifts for granny, or aunties or just look great on the Christmas table. I f you wish to hang them on the tree before cooking make a hole in the top of the biscuit so that you can thread a ribbon through it, or make a hole in it when its cooked but before the biscuit cools and hardens.

I have made the above many times both with sleepydormouse and with children at school just remember hot syrup gets very hot mind their little hands.
There are other cheaper golden syrups but this is the one my mum always used to use and I often use this one. I just love the green tin with the golden words and the lion.
