Lyons Battenburg Cake ... cross section, displays a distinctive two-by-two check pattern alternately coloured pink and yellow. The cake is covered in marzipan and, when sliced, the characteristic checks are exposed to view. These coloured sections are made by dying half of the cake mixture pink, and half yellow, then cutting each resultant sponge into two long, uniform cuboids, and joining them together with a little cream, jam, or icing, to form one cake. The origin of the name is not clear, but one theory claims that the cake was created in honour of the marriage in 1884 of Queen Victoria's granddaughter to Prince Louis of Battenberg. The four squares of the cake are said to represent the four Battenberg princes.

 ... yellow, or normal coloured sponge square shapes and then two pink and as these go diagonal to each other it kind of makes up a chess board look, except with pink and yellow rather than black and white, and of course with cake as well but you get the idea. I was just taking a look around reading and rating when I happened upon the food section, and more specifically the cakes. Now I do like a nice piece of cake and I tend not to be too fussy – if it’s got lots of calories it’s OK by me! By the way I do know that, as a diabetic, I have to be careful so I do make cakes a treat not a daily indulgence! There is, however, one cake I can’t stand and that’s Battenberg – I can’t be doing with marzipan you see. It was one of my late dad’s favourites so I used to buy it for him even though I didn’t personally indulge. Battenburg Cake has always struck me as quite an odd concept. I mean, who thought up the idea of using the different colours and different ingredients with their individual, very unsimilar tastes? But that aside, fortunately for us consumers whoever it was got lucky and the combination works. The Battenburg Cake, of German descent, is essentially 4 thin rectangles of sponge cake, 2 yellow and 2 pink with the colours arranged diagonally, stuck together with apricot job then coated with a thin layer of marzipan to created a cuboidal shaped cake that can be easily sliced into square shaped pieces for eating. -LYONS BATTENBERG - Lyons has been making cakes for over 100 years now. With varieties such as: The French Sandwich - Lemon Curd Tarts - Trifle Sponges - Carrot Cakes and Treacle Lattice Tart we certainly are spoilt for choice. My favourite however, has to be their scrumptious Battenberg cake. I absolutely adore marzipan. I could eat tons of the stuff; I have a real passion for it. I really love cake! I love sweet cakes as well which means in my house (I live with my parents at the moment) I have to buy it because no one else is a fan of this type of thing which isn't so bad really because at least it means I get to stuff myself silly with these types of products lol. I saw this on offer yesterday in my local Asda store at the special offer price of 99p a cake however it is usually round the £1.49 price mark and widely available in all sorts of places. I do not eat very much cake and when I do my tastes are simple. Lyons Battenberg is a simple cake even though it looks complicated at first glance. The prettiness of Battenberg appeals to me because it is four squares of cake which alternate pink and yellow, this is then covered with a bright yellow marzipan layer and the whole cake looks very bright and summery.
