Slicing through one of the fillets, there was a lovely crackling noise instead of that awful crunch you get when the breadcrumbs have dried out in the oven. The fish inside was succulent and moist, smelling delicious. I was delighted to notice that the skin of the plaice hadn't been removed - some people hate it, but for me it's the best part, and I always feel cheated when I buy breaded plaice and find there's no skin.
