I am a cheese fan. I have always had cheese for dinner since when I was a kid, since it was something that my family liked.

Parmesan is one of my favourite cheeses and one which I think is pretty unique.

It comes from Italy and the real thing is the one from Italy. A bit like Feta, there is no point in having these cheeses from other regions, because they very much derive their flavour from the local milk.

In the case of Parmesan, you actually have 2 varieties, Parmigiano and Reggiano, which unfortunately are often confused as one, even by Dooyoo.

Reggiano is drier and more seasoned.

The Parmesan is norammly granular and is not meant to be sliced, rather cut. You ahve special knifes for this cheese and the idea is to cut small pieces of it.

It is a cheese extremely rich in calcium and proteins and it is ideal for both young and old people.

It is also an ideal complement for sportpeople. I nromally take a small piece of Parmesan with me when I cycle for example.

It is available from Tesco and Sainsburys and Italian delis.
