Patacks pappadums

A perfect starter or accompaniment to an Indian meal.

I love a good curry. Be it from a restaurant a takeout or one I make myself.
Often in a restaurant they offer you pappadums as a taster.
I do not often have them at home unless I am showing off and cooking a curry for friends.
Pappadums are thin lentil crackers made to a traditional recipe sun dried to preserve flavours.
I do not make mine from scratch I buy ready prepared Patacks pappadums. Pappadums come in a pack of 10 for 99p in a thin box about 17cm square. The box is a lilac/purple with green with the Patacks emblem on it . the pappadums are either plain or spicy. I prefer the plain my food is spicy enough.

The ingredients are Lentil flour, salt, raising agent sodium bicarbonate,Rice flour, vegetable oil says thios product may contain traces of nuts. Energy 275kcal per 100g ok so it?s a 100g pack contains 10 pappadums 27.5 cal per pappadum

Patacks pappadums are easy to prepare you can either microwave them or fry. I fry mine.
Put about 1-1.1/2 inches fat in a frying pan heat oil till its very hot . Then just pop a pappadum in the pan it fries immediately expanding and crisping up , going brown .It only takes 2 or 3 minutes Remove it quickly and drain on kitchen towel. Then I cook the next one. They have to be cooked individually.

To cook them in the microwave lightly brush with oil both sides cover with kitchen paper and cook for 45 seconds .

I use them as a starter with pickles and chutnerys while waiting for the phone to ring and our local take out to tell me my curry is ready to pick up. Or as an accompaniment to a curry I have prepared. They are an excellent crisp addition to a curry meal. Thanks for reading Mary
