pataks madras curry paste is lovely, it is a paste not a sauce so it will go a lot further and last a lot longer and dont worry you wont have to live on curry for a week after you open it as it can be stored in a fridge for many months or frozen for upto 12 months.

I use this when making our saturday night tea, firstly i use the paste streight out of the jar to coat the chicken wings before going into the oven, these are lovely but realy do set my mouth on fire.

Secondly i put 4 table spoons of curry paste into two pints of water and add the finely chopped potatoes, carrots and peas and leave to cook on a low heart untill the veg are cooked.
This tastes a lot weaker than the intense burning of the chicken wings and is a very nice warm heat in your mouth.

The best part with this paste is that you can dilute it to how hot you want it.

Summary: a great paste that can be used many ways in cooking
