So what is Ricotta? ********************** Ricotta is an Italian soft cheese. It is pure white in colour and is very soft in texture, softer than cream cheese, but thicker than yoghurt. It is very moist and when you first open it you may find that it seperates slightly around the edges, but it can easily be mixed back together. The cheese smells of very little and in fairness it also tastes of very little. But then this is a cooking cheese and you wouldln't really want to have it in a sandwich. Ricotta cheese an Italian cheese white creamy mild delicious added to pasta?s or in a flan.
