Loving pancakes the way I do but being so rubbish at making them of late I have resorted to purchasing packet mixes of the stuff made up. I simply find I can't go wrong with them and all I have to do is add some water and an egg and away I go, opposed to before never knowing how much salt to add to the mix or whether to make up my mixture using some milk and water (aka Delia Smith's idea!) or whether to add butter to the mixture etc. I found it all so mind boggling that once I had worked out how to make up the mixture and was cooking it I'd burn the lot cos I was so confused!
