I first came across Quark many years ago, in the 1970's, when visiting Germany as a child. Since then, I have bought it on quite a few occasions, especially when I am trying to be healthy and lose a little weight. All the Quark that I have come across has been produced in Germany. It is a soft cheese that is very low in fat, and is therefore very good for those who want to lose some weight. It is very versatile, and can be used in both sweet and savoury dishes. I have found Quark to be really good mixed in with pasta sauces instead of cream or a higher fat cheese. It makes the sauce a lot more thick and creamy, without adding a lot of calories. Before I started attending slimming world meetings I had never heard of quark. I'm sure I'm not alone in this so thought I'd share my experience of Quark with you, hope its helpful! Quark is a soft cheese of mid European origin. The name quark originates from German and means curd. The cheese itself looks like cream cheese and is sold in similar round plastic tubs. It is very low in fat, just 70 calories per 100 grams compared to 400 grams for full fat cream cheese!
