I am a big fan of smoke salmon. I love the taste, smell and texture. However, it can be a little expensive at times and that is where smoked salmon trimmings come in very handy! You know hoe when you buy smoked salmon, it comes in neat and tidy thin slivers? Well, in the wild, salmon doesn't grow like this! It is in fact big and chunky and a bit flakey when it is cooked.
