Advantages: Cheap and easy to use for cooking

I am a big fan of smoke salmon. I love the taste, smell and texture. However, it can be a little expensive at times and that is where smoked salmon trimmings come in very handy!

You know hoe when you buy smoked salmon, it comes in neat and tidy thin slivers? Well, in the wild, salmon doesn't grow like this! It is in fact big and chunky and a bit flakey when it is cooked. But we like to see our smoked salmon all smooth and silky and neat. so the manufacturers slice it for us. But this creates a lot of waste. What happens to all those bits of smoked salmon that are just positioned on the wrong part of the fish to make it into one of the large slices? Well, manufacturers could through them away but that would be very wasteful. Instead they gather all the odd bits up and put them in a packet, call them trimmings, charge a quarter of the price and hey ho, everyone is a winner!

The reason I like trimmings is twofold. Firstly, because I am tight and they are cheap and yet of equal flavour to the slices of smoked salmon. Secondly, if you are cooking, this is the lazy man's product, as it does not need cutting up! I love to put them with pasta, olive oil and tomatoes. Utterly divine!

Of course, if you want to present your smoked salmon beautifully on a plate, you will need to go for the much more expensive slices. But for cooking, or sandwiches, trimmings are definitely the way forward!

I often use the supermarket value ones - they are just as tasty and so cheap!

You know I think sometimes we look at the cheaper food in a supermarket and simply think it's a lower grade. However, you're right. A lot of times it's just off cuts from the nicer looking pieces. I do the same with bacon off cuts when I make a stew that needs bacon. Great tip.
