Soya Milk ... beverage made from soybeans. The nutritional value of soy is well documented around the globe. For instance, soy protein has been found to be effective in actively lowering cholesterol and helping to maintain a healthy heart. Soy milk has also become a welcome alternative to cow's milk for the majority of consumers world-wide who suffer from Lactose Intolerance - the inability to digest significant amounts of lactose, the natural form of sugar in milk. Soy milk originated in China, a region where soybean was native and used as food long before the existence of written records. Later on, the soybean and soybean foods were transplanted to Japan. Soybean or "vegetable" milk is reputed to have been discovered and developed by Liu An of the Han Dynasty in China about 164 B.C. Liu An is also credited with the development of "Doufu" (soybean curd) in China which 900 years later spread to Japan where it is known as "tofu". Traditional soy milk, a stable emulsion of oil, water and protein, is simply an aqueous extract of whole soybeans. The liquid is produced by soaking dry soybeans, and grinding them with water. Soy milk contains about the same proportion of protein as cow's milk~ around 3.5%; also 2% fat, 2.9% carbohydrate and 0.5% ash. Soy milk can be made at home with traditional kitchen tools or with a soy milk machine.

I started drinking it a few months ago because it has a lot of health benefits compared to normal milk and I'm trying to be healthy. In August last year I was forced to do the unspeakable … give up chocolate!! Argh! Just to make things even worse …. No more milk in my tea. How bad can it get?! The reason for having to take such drastic measures was because my son was diagnosed with a severe dairy intolerance and as I intended to keep breast feeding it meant I had to give up on all dairy produce. There are a variety of different soya milk's available, and if you're about to try soya milk for the first time it can often be difficult to decide which one to go for, afterall they're typically more expensive than milk so you've got more to lose if you don't like it. There so much hype around nowadays about the benefits of Soya and it was out of curiousity that I picked up a bottle of Soya Milk from Sainsbury's, to find out what all the fuss about. What was this stuff that claimed to be the healthy replacement to my beloved Full Cream Milk. I just had to find out. I put it in the fridge for a couple of hours so that it could chill a bit because I like my milk really cold.
