NAN/ NAAN BREADS I really like a nan bread with my curry. Nan is an Indian bread leavened made with yeast and with yoghurt. These are traditionally made in a hot clay oven known as a tandoor. You can have plain nan, or there are variations with onion added or poppy seeds spicy ones with coriander and cumin. Nans can be stuffed with a meat mix that?s kima nan or as a sweet dish with raisins incorporated in the dough. Nan breads the plain ones or the spicy ones are readily available in most supermarkets at about 80p-£1 for 2 large ones or 4 small ones Just take them home and reheat in the oven to freshen them for about 4 minutes and sit down comfortably to eat with a curry The ones with meat inside can be eaten like a sandwich/pastie In a curry house they cost about £1.50p each for a plain nan Of course you could make your own nan breads I have tried once or twice but it?s a lot of effort when I can buy them at the supermarket. Nan breads freeze well so when they are on offer, buy 2 get one free or are reduced because if the sell by date I often buy them and freeze them. Here is a recipe if you wish too make your own. Maybe I would if I wasn?t working. 225g/8oz/2cups white bread flour you could use wholemeal flour 2.5ml/ 1/2 tsp salt 15g ½ oz yeast 60ml/4 tbsp lukewarm milk 30ml/2 tbs natural yoghurt 1 egg 15ml/1 tablespoon vegetable oil 30ml-45ml/ 2 ?3 tbsp melted ghee or butter, for brushing Makes 3 nan Method Sieve flour and salt together in a large bowl. Cream the yeast with the milk set aside for 15 minutes Add the yeast mixture, oil, yoghurt, and egg to flour mix to smooth dough. Knead the dough on a floured surface for about 10 mins put it in bowl cover with a clean t towel or lightly oiled clear film leave in a warm place to rise for about 45 mins. Until about doubled in size Preheat oven to 230 / 45
0f/ gas 8c Put the dough onto a floured surface and divide into 3 equal pieces and shape into balls. Roll out about ¼ inch thick (the traditional shape is like a tear drop.) place on an oiled baking sheet bake in the hot oven till light brown and crispy 5 to 10 minutes. Mm I think I might make some at the weekend writing about it is making me feel like doing it now what curry shall I cook to go with it?
