Stilton has to be considered the King of Cheeses. Its very name instils majesty and greatness, and it more than other cheese is considered superior.

Or have I just gone mad, I mean it’s only a cheese, isn't it?

Stilton is one of those STRONG cheeses, one of the strongest I have found. It is slightly off white and quite crumbly, and has veins of blue mould running through it. This is the blue Stilton, and although you can get white Stilton I have never actually eaten it, so I can't say no more!!

Of course when I was kid I used to turn my nose up at the mere thought of eating Stilton. Why would anyone want to eat mouldy cheese that stunk? The answer, because it tastes great.

Stilton like many other foods is one that always comes out at Christmas. Perhaps the fact that it’s not an everyday item is what makes it special. I only eat Stilton at maybe 3 or 4 times during one year, and so every time I do eat it, it is special. I think I must have been about 13 when I first tasted Stilton. One Christmas I must have plucked up the courage to have a taste, and I guess I loved it.

Stilton is a hard but crumbly cheese. It isn't as hard as cheddar, but is a lot harder than a cheese like Brie. It has a very very strong smell, in some cases a little like socks, and sweaty ones at that. There are two types of blue Stilton that I have eaten, either bought in chunks from a supermarket or Stilton that comes in a little pot. Often Stilton in pots comes with a section of the rind still attached, but for some reason the Stilton in the pot always seems to taste and smell more strongly. SO much so infact that once I just couldn't eat it. The Stilton that comes in triangular sections from the supermarket seems less strong, but still tastes very nice. The veins of mould give the Stilton its unique taste, almost tangy and hot. It has to be tasted to be believed, so please do try it!!!

Traditionally Blue Stilton
is eaten with port. Then two compliment each other quite well, and last Christmas I was the grateful recipient of a large Port and Stilton set. I'll not tell you what happened when I drunk all the port!!!

As well as all of that Stilton is also widely used in cooking in various dishes, none of which I have ever eaten! It’s maybe just me but I don't fancy Stilton in food, I feel it would overpower whatever it accompanied. It goes well with biscuits or crackers too, but excels when eaten by itself.

Stilton is rather expensive though, which is what I guess makes it limited to times like christmas.

Stilton truly is the King of Cheese.

I have never had the courage to try this but you never know I am getting older know so I may try it sometime soon. Great Op
