Taleggio is another of the great cheeses of Italy. It comes from a specific area in the North of Italy, in the region of Lumbardy, called Val Taleggio (Taleggio valley) Originally the cheese was produced with the milk at the end of summer and autumn. It was stored in small wood boxes of square form. The crust was treated with mineral salts to make it crunchy and help preserve the cheese. It was stored in caves and kept on wood shelves.
