I got home from a long day at work yesterday and didn't want to spend hours in the kitchen cooking up a meal. I fancied something quick and easy to make and always have a fajita meal kit in the house for days like these.

The kit comes in a cardboard packaging with everything inside separately wrapped (tortillas and salsa in a clear plastic wrapping and seasoning in a paper wrapping) The tesco fajitas meal kit is great value for money. It only costs £1.90 for for the kit which includes 8 flour tortillas, spicy tomato salsa and fajita seasoning and compared to other fajitas kits on the market for example, Old El Passo costing around £2.80 it's excellent value for money. Keep a look out for Tescos special offers, I've seen this kit on sale for 2 kits for £2! The tortillas, seasoning and salsa can be kept in the fridge for up to 3 days but I always use them for one meal.

There are some other ingredients which you'll need to buy such as chicken, onions and peppers and depending on how much filling you want will depend on how much you buy. For two people I tend to use 2 chicken breasts, 1 onion and a packet of red, green and yellow peppers, this gives a lot of veg to the meal but I prefer this. Fresh peppers are much nicer than frozen peppers but I do buy a pack of frozen peppers if I'm on a budget and it works just as well.

The fajitas take about 20 minutes to cook, firstly you need to dice your chicken and place in a pan with with the seasoning with a small amount of oil and cook for 5 minutes (the seasoning makes the dish hot), slice the peppers and onion and add them to the chicken and fry for 2-3 minutes. Separate the tortillas and warm them in the microwave on full power for 45 seconds. Once cooked, spoon filling into the middle of a tortilla and top with salsa sauce (included in the kit) fold over the bottom and then both sides and eat with your fingers. If you like hot dishes then you'll like this but I find it a bit too hot like this so I add some sour cream to the filling which makes it cooler and very tasty.

Overall, this is a great fajitas kit, it's such an easy meal to make and if very filling. The kit is suitable for vegetarians (just replace chicken with Quorn or have just with vegetables) so are an easy meal to make for anyone. 5 stars for this product, it's yummy!

I have always got one of these in and find they are better than the bigger branded ones :-)
