Advantages: tasty and filling salmon fishcakes, great as a light lunch

Disadvantages: fishcakes need more seasoning

I have very little time on my hands with a young baby and need food that is quick to make, keeps me satisfied and meets my hunger pangs. I have never attempted to make my own fishcakes, so the next best thing is Tesco's range of ready to cook Fishcakes, in particular their Salmon Fishcakes.

Tesco's Salmon Fishcakes are made from flaked salmon fillets and potatoes and have been seasoned and coated in crispy breadcrumbs. The Salmon Fishcakes can be found in fresh fish aisle and are available in an 180g pack of two for £1.14. There is a long-term price offer on these and you can buy 2 packs for £2.00.

The fishcakes can be shallow fried, grilled or cooked in the oven. Personally, I prefer them cooked in the oven. Tesco suggest that you cook them at 220 °C / 425 °F / Gas Mark 7 for 15-18 minutes, however I feel that they are not cooked enough after 18 minutes, so I tend to put them in for around 20-25 minutes and turn them once, halfway through cooking. Each 90g fishcake contains 42% salmon, 210 calories, 10.8g of fat, 2.4g of sugar, 0.9g of saturates and 1g of salt.

How do they taste? Actually they are very nice and filling. I know that the Salmon fishcakes have been seasoned and there is definitely no need to add salt to them, however I do feel that more herbs being added to the fishcakes could improve them. One fishcake may not seem enough, but if you have this as part of a meal it is plenty, or you can have two on their own which is what I do when I want a quick lunch. The breadcrumb coating becomes very crispy and turns a nice golden colour when cooked. You will find chunks of salmon in the fishcakes, rather then the flakes of fish being pureed, which makes a change. Also, they are not too greasy as some foods with a breadcrumb coating can be.

I have rated Tesco Salmon Fishcakes 4 stars. I feel that they need more seasoning and a disadvantage with the fishcakes is that the they have a very quick sell by and use by date, of around 2 days as they are fresh. Therefore if you happen to forget about them in your fridge you will end up wasting them by having to throw them away.
