My 'stock cupboard' would make any seasoned cook cringe - I barely have any essentials, though I'm much better than I used to be. One day I'll be a proper person and have my own spice collection and random things like chickpeas! But until then, my stock cupboard consists of mainly lots of different kinds of pasta - giant (and I mean like 2 per meal) penne, bows with different coloured designs on, and of course the old favourite, spaghetti. Tesco Tomato Puree Tube is a relatively inexpensive product at 39p per 200g tube. It's not been the most reliable product over the course of the last few months though, as the price has jumped about the place from around 20p per tube up to nearly 50p per tube. It's been in and out of stock quite a bit in our local store too which is a real pain. There's nothing worse than picking out all of your ingredients for a dish, only to then not be able to get the last thing you need! Using this product is easy enough. Cooking is an important part of my life as I love good food, which must be cooked well and seasoned properly, and I like to use fresh ingredients, local if possible, but here I find problems as in Scotland the tomato season is very short, and although we do get local Lanark tomatoes they are always expensive. This leads on to why I purchase tubes of Tomato purée, the Double concentrated purée adds a depth of flavour to my cooking that no fresh tomato can do. Fortunately there is a reasonable shelf life so it is possible to have spare tubes in the cupboard, but once opened store in the refrigerator and it should be used within a month of opening. This very versatile basic ingredient actually brings back a lot of memories for me - it was always a staple ingredient in my Mum's fridge, and she'd use it in all sorts of ways, from bologneses to bizarre concoctions with garlic to ward off colds. We tend to use it in sandwiches, although on the rare occasions that I make bolognese completely from scratch I'd use a whole tube. Our nine-year old has recently got quite hooked on it when she's making her own sarnies, mainly ham ones, which is great as she doesn't like to eat a lot of fresh fruit & veg, and, strangely, definitely NOT actual tomatos, so it's a great way of getting the vitamin C in! Tomato puree is an essential- anyone who has ever had a period of low income or been a student, is fully aware all you ever need is about 5kg of pasta twists and a few cans of chopped tomatoes and some tubes of tomato puree and you can at least eat tomato pasta! Tesco Tomato Puree boast of being double concentrated so you need to use less to get the same tomatoey effect in your cooking. It is versatile- you can spread it on bread for bruchetta, spread it on a pizza base to make your own pizza, add it to cooking/ recepies, add it to meat for bolognese style meals - anything along the lines of Mediterranean cookery.
