This is a great tasting vegan recipe which can be eaten as a main or as a side dish - for anyone that is NOT a vegan it does go well with fish. I call it Lentil pie although there is no pastry involved. There is also very little fat making it a very healthy "pie"! It's cheap to make, filling and a real winter warmer comfort dish. This is a recipe for an amazing vegan carrot cake that I found on the Vegweb.com website, a great comprehensive site with tons of 100% vegan recipes. I've made it loads of times and it always comes out great - loads of non vegans have asked for the recipe and were surprised that it doesn't have eggs or diary in, saying its the best carrot cake they ever had! I like to add 50g each of chopped walnuts and raisins to the mix. There are loads of lovely textures and flavours going on and the pineapple and coconut are a great addition, and don't distract from it being a carrot cake.
