Advantages: Easy to make, quick and simple, economical, look great.
Disadvantages: Soft texture instead of crunchy , can taste the oil in them.
Vegan Cookies.
This particular recipe was given to me by my sister. It is simple to follow, quick to make, is economical and best of all they taste delicious.
This particular recipe will make 6 large cookies.
Ingredients:
5oz sugar,
4oz margarine,
4fl oz oil,
3 tablespoons water,
2 teaspoons vanilla extract,
9oz plain flour,
1 teaspoon bicarbonate of soda,
1/2 teaspoon salt,
1 100g pack chocolate chips.
Method:
1. Pre heat the oven to 180 degrees.
2. In a bowl mix together the sugar, margarine, oil, water and vanilla.
3. In another bowl mix together the flour, bicarbonate of soda and salt.
4. Add the margarine mixture, along with the chocolate chips to the flour mixture. Mix well.
5. Prepare 2 baking trays (do not grease these). Place 3 large scoops of the mixture onto one of the baking trays, and another 3 on the other one. Pat down slightly into round shapes.
6. Bake for approximately 15 minutes or until the edges are nicely browned.
7. Remove from the oven and leave to cool before removing them from the trays.
8. The cookies are now ready to eat!
What I like about this particular recipe is that they are so easy to make and they look good when they come out of the oven. Just make sure that you leave plenty of room between the cookies when you place the mixture onto the baking trays, as the mixture spreads outwards as it cooks. Hence if they are too close together they will join onto each other and you will end up with one giant cookie.
These particular cookies are also quite soft, not the hard crunchy type, so bear this in mind if you like them crunchy. Another point to bear in mind is that although they taste good, you can taste the oil in them (though I find this makes them taste unique).
I believe the recipe can also be adapted to make 12 smaller cookies instead of 6 larger ones, although the cooking time will need to be reduced if you choose to do this. As of yet I have not tried this, so cannot comment on the timing required.
Overall a quick and easy recipe that just about anyone can manage!
