I do believe that home cooked fresh meals are best and I enjoy cooking and experimenting in the kitchen...but like most I do have the sneaky ready meal in my freezer. Well being a student and sometimes I just want a yummy quick meal that requires zero thought and on days like these WeightWatchers Chicken and Lemon Risotto is pure perfection. I have recently lost a couple of stone and while I'm about the size I want to be, obviously I don't want to undo my hard work and as such am continuing to watch what I eat. When I was dieting, I discovered Weight Watchers' wide range of microwave meals, and have to say I'm fairly impressed. This risotto has to be my favourite. Risotto is not the easiest dish to make, what with all the stirring and such, so it's nice to see microwave varieties cropping up which actually taste pretty decent. There are some times I am left to fend for myself so in my opinion anything is fair game in the freezer even my mum's Weight Watchers stuff, lol! Now I'm a student it is time to customise myself with the microwave anyway :-P This 'Chicken & Lemon Risotto' is a dieting ready meal which actually tastes really good and has real lemon zest in it for added tanginess...
