It is sold in all supermarkets, but it hard to use if you like sliced cheese and you may get frustrated by its crumbly texture as it falls apart when you cut it so it is hard to get it from the chopping board onto your crackers or bread. Wensleydale has been made famous in recent years by its promotion and constant references to it on Wallace and Gromit. I have even at one time seen and bought a specially packaged Wallance and Gromit Wensleydale cheese that was a mass of Wensleydale coated in green wax with a flat base with a Wallace and Gromit sticker on (yay). I found the wax covered version of the cheese the nicest as it seems to keep it fresher. Though you will spend ages trying to get wax lines off your knives after cutting through the wax to produce slices of cheese (that are VERY delicate and crumble). Wensleydale is one of my favourite Britsh cheeses, its distinctive taste really makes the grade, light, moist and crumbly it's perfect for putting on crackers for a light dessert. It's taste goes nicely with something sweet and whilst cranberry sauce is recommended, I really can't stomach the stuff but often eat it with a sweet pickle or chutney. Wensleydale is a white cheese that is made in Hawes in North Yorkshire, I was once boasting about it to a French friend, only to read up on the internet that it had in fact originally derived from France and was a recipe that French Cistercian monks brought with them from the Roquefort area! Wensleydale - one of my favourite dales, and certainly my favourite cheese. This is the best way to enjoy the King of Yorkshire cheeses: * do not buy cheap, supermarket versions of Wensleydale - they are crumbly and tasteless. Instead, buy the genuine article, from a deli, or the expensive bit of the supermarket. * open the cheese, leave it out of the fridge for an hour or so, so it can breathe, and comes up to room temperature. After these instructions, you can do one of two things. * Cut a slice of dark, alcohol soaked fruitcake, pour a cup of tea, add a slice of wensleydale, and enjoy.
