A cooling rack is an essential tool if, like me, you like to do a lot of baking. There are various ones on the market but they are all pretty much the same. They are basically a wire rack which is used to place freshly baked items on so they will cool faster. Just about every recipe you use will indicate that once your cake is out of the oven you need to transfer it onto a cooling rack straight away and get it out of the hot pan that you were cooking it in so it does not continue to bake and get overcooked. Cooling it on the rack gives you somewhere to place it once it comes out of the oven.
What I also like about cooling racks is that once the cake has cooled down you can then ice it on the rack as it does not interfere with the icing method because the rack is flat and does not interfere on the sides of the cake like say a cake tin would.
If it has lots of slats in it you will get marks on your cake but always be sure to turn out your cake so that the bottom of the cake is the part that touches the rack so when you have iced it you do not notice the bottom anyway. Also I would not suggest using a cooling rack to help get your cake out of its tin. I learnt this the hard way many years ago when I attempted to get a hot cake out of a tin with the help of a wire rack. Well, the rack just made it break in many places and ended up as a bit of a mess so I had to start all over again. If you need help in getting your cake out of a tin I suggest using a flat plate and then transferring to the wire rack immediately!
Most cooling racks will have little feet on them, usually bits of metal that heave been bended to make a little arch. The feet are pretty much essential as the allow air to circulate completely around the food and cool it down better than a tray would.
It isn't just cakes that you can put on these cooling racks, if you bake biscuits or cookies they are great for this too and I sometimes even use mine as a heat stand and place hot dishes that have just come out of the oven on them. All in all a versatile kitchen item.
