Advantages: interesting for children, lots of fun

I share a passion for good food and healthy cooking ok I do give in to the temptation of chocolate now and again but then most of us do if we?re being honest.
The main reason I wanted to do this op is because my daughter turned vegetarian when there was all this foot and mouth disease going on, anyway as a parent of 2 children I know that we all want are children to eat healthy but it can help if the food is a little bit interesting so here goes:

MASHED POTATO VOLCANOES WITH HOT LAVA

This is one of my daughter?s favorite tried and tested by myself and also requested by her friends.

?VOLCANOES?

?4 large potatoes, peeled and diced
?2 tablespoons of margarine
?Half a cup of semi-skimmed milk
?Salt to taste, optional

?LAVA?

?1 cup of semi-skimmed milk
?2 tablespoons flour
?Half a cup of grated cheese
?2 tablespoons of tomato ketchup

?GREEN VEGGIES?

?About 1 cup of frozen peas cooked, or steamed broccoli if preferred

Place the diced potato in a large saucepan with water, Bring to a simmer then cover, simmer over a medium heat until tender for about 15 minutes.

Once the potatoes are tender, drain them, put them in a mixing bowl, stir in the margarine and milk, mash the potatoes, add a little salt if desired.

To make the ?lava? heat the milk in a small saucepan, dissolve the flour in a little water till it forms a smooth paste. When the milk is hot, stir the flour slowly into the saucepan, sprinkle in the cheese and stir until it melts.
Simmer until you have a smooth and thick consistency, put in the ketchup with some red fiery looking streaks.

Divide the mashed potatoes among four serving plates. Shape them into mountains, Then press the tops down lightly to flatten, and finally make a small indentation at the very top with your thumb, then place some of the peas or broccoli around the volcano
Usually my daughter does all this he
rself as it?s much more exciting.

And finally my daughter pours some of the ?lava? into the indentation made at the top of each ?volcano? which flows over each side.

I think this review might be better off in the recipes section.

Mash volcanoes were all the craze after close encounters of the third kind. Haven't made one for years. I like the lava touch, more practicle than spaceships!!!
