My girlfriends parents have been going to Paradise Park for over 10 years and last year they invited us along (Sep 08). They have an array of rooms, we had the 'Double room with lounge' which was ample for our requirements, the 'in-laws' went for a Colonial suite which I must admit was very impressive. The hotel often has offers to upgrade to the posh rooms for a reduced price either on arrival or mid holiday.
They have catered very well for their clients by offering 3 areas to choose to relax or swim, the main pool area is really for kids, there is a quieter area with small but long pool and then on the top floor of the hotel is an adults only bar and pool (although the pool is just a token large bath :). They have lots of events on for kids and adults although on an evening we tended to go to the local bars.
Breakfast and dinner were inclusive in the deal. It is a buffet dining room with loads to choose from, does get a bit 'samey' after a while but still well cooked tasty food. I would avoid the cooked breakfast like the plague though, their sausages and bacon are from no animal I have encountered on this planet! There's a place round the corner that does a great fry up for about 3 euros.
We spent most of the time in the adults only section which was nice and quiet and they have trendy decking and loungers.
The staff were extremely friendly and spoke very good English. We were out there at the time when XL went bust and the hotel staff were being very helpful to their guests even though it was not the hotels problem to fix.
It's only a 10 minute walk from the seafront although it is at the top of a hill (known as Cardiac Hill!) so you may find bus or taxi useful if you have a few too many G&Ts

Summary: Ideal for reasonably priced getaway
