As a chef for more than a decade with experience of katsumi, wustof and henckles, henckles are overall a good performance blade. using twin pollux or twin gormet series would be ecnomical as it has a thin blade(which shortens need of sharpening) also on the high carbon compound in the blade which makes it easy to sharpen and maintain. but high cabron makes it easy to break too. so its not recomended to chop bones unless with a thicker blade like a cleaver. also, to main the knife, hone the knife with a honing steel before and after it is used.(p.s hone not more than 10 times a side and make sure the angle and motion is regular(this need practice)) and you could hone a ... Bought these on the previous recommendation, I also got a 4-star set on a sale. It cost £145 + 6 del for the 8-piece set in a block. They arrived very quickly from Armorica (www.armorica.co.uk - Product Code: 35140) just 4 weeks ago. The set consists of wooden block, 10cm Paring Knife, 13cm sandwich knife, 20cm Cooks Knife, 16cm slicing knife, 20cm Bread Knife, 23cm Steel & 20cm Kitchen Shears. They feel very good to use, cutting through a swede has never been so easy! I regularly do a big blow out and make enough hotpot or stew to feed 50 which I freeze. If you are looking for some serious kitchen knives, are serious about your cooking or just want some quality steel then put Henckels knives on your list. Firstly let’s not fool ourselves here, these are serious knives and come with a serious price tag. However, good knives are always expensive as the quality is in the detail and when you own them a long time those details are what matter. So what’s wrong with cheap knives. Well not a lot to start with, most new knives are sharp and stay sharp for a while but once it come to keeping them sharp, to them standing up to the rigours of constant washing and all the rest, quality will show through.
