Advantages: gives good sharpness and easy to maintain

Disadvantages: Handle degrades

As a chef for more than a decade with experience of katsumi, wustof and henckles, henckles are overall a good performance blade. using twin pollux or twin gormet series would be ecnomical as it has a thin blade(which shortens need of sharpening) also on the high carbon compound in the blade which makes it easy to sharpen and maintain. but high cabron makes it easy to break too. so its not recomended to chop bones unless with a thicker blade like a cleaver. also, to main the knife, hone the knife with a honing steel before and after it is used.(p.s hone not more than 10 times a side and make sure the angle and motion is regular(this need practice)) and you could hone a knife in 10 seconds!

the cons of 4 and 5 star, the abs or whatever plastic deforms when it ages(like in 4-5 years) due to being wet amd 'hung' dry on a knife block.

i would strongly advice not to use knives like giessar messer as its using some alien type of metal which would never be sharp.

Summary: worth the money

I use Zwilling knives, ranging in price from quite inexpensive (purchased at Target in the States) to really quite price ($75 chef's knife), and I love the way these feel in the hand - lovely balance, good edge.
