Chorizo is one of those food items that seems to be enjoying increased popularity if menus in restaurants, celebrity chef recipes and even crisp flavours are anything to go by. Certainly it is something that in my family we have only started eating and enjoying over the last couple of years, and only very recently has this cooking chorizo been available from Tesco.
I had tried to find cooking chorizo before but not been able to locate it anywhere so was pleased when it suddenly became available at Tesco, sourced from Spain it would seem, and at the price of £2.99 for 250g. It is to be found with the ham and cured meats and is a cooking ingredient as opposed to a ready to eat item.
Chorizo in general is basically a pork sausage from Spain, that is flavoured with paprika and garlic, it can be used in many dishes from pasta, to pizza or jambalaya. Most chorizo comes in cured or dried form, it is quite a pricey item, you can buy a variety in Waitrose which comes from "acorn fed" pigs, and in Spain there are lots of different kinds of chorizo, it often features as part of a typical tapas dish and is widely enjoyed.
This particular product is not a cured sausage, it is softer and has to be cooked, as the name would suggest. The price makes it a little more than your average sausage, but I find that a packet of these will generally go towards making at least two meals for a family of four, as I shall explain, which makes this a good value product in my mind.
The sausages are brightly coloured red, due to their paprika content - a check of the ingredients reveals no other colourants. They can be cooked in the oven for about 15 minutes, but I prefer to slice them thinly and use them in various dishes, especially ones where I would previously have used cured chorizo, and I find these sausages a huge improvement.
Sliced and added to a frying pan they leach red oil, to which I add peppers and tomatoes to make a tasty pasta sauce. They also work fantastically well in an omelettte, as a pizza topping, or in chicken jambalaya (a spicy rice dish). They take about 5 minutes to cook through in my experience when thinly sliced - Mr Tesco reckons 9 minutes to fry but I think that must be for a sausage cooked whole.
The serving suggestion on the packet is chorizo and potato salad, which I have yet to try, but I have used them in rissottos, soups, with meatballs and even just to eat cooked by themselves.
I find half a packet goes a very long way - because these sausages are very flavoursome you don't need to eat much of them to feel that a little something has been added to whatever you are cooking. They are a little spicy but not over hot. They have a slight kick to them and that distinctive chorizo flavour, when cooked they are much softer and easier to chew than the cured version, and in my opinion just much nicer than the type I used to buy - no rind to remove either.
The fat content is quite high at 39.8 g for 100g (they might as well call it 40 percent fat), but then that is probably why they taste good - and as in a typical meal I would be eating probably about 30g I am not too worried. The salt content is sky high too - 4.2g for 100g, but again you are probably only eating a small amount. These sausages are so meaty and solid (there is apparently 108g of pork for 100g of finished product, not sure how that works then?). I doubt even the most greedy carnivore could polish off more than about one of these sausages - of which there are 4 as in the picture.
Once opened the sausages should be used within a couple of days, they tend to have quite a long use by date and have to be kept refrigerated, I don't think they can be frozen as there is no mention of this on the packet.
I do love the fact that as a nation we are getting a little more adventurous in what we eat these days, or so it would seem, and in my family we all enjoy eating these sausages, they really do make for a tasty meal. If you haven't seen this in your local Tesco yet I would recommend seeking them out and cooking something special.
