Toulouse is definitely one of those overlooked cities which is overlooked and well worth a visit, even just for a weekend now that is a lot easier to get to with more budget airlines flying there directly. I spent a year there and loved every minute of it. The main Place du Capitole with the town hall is in the centre which has some nice restaurants where you can sit outside and watch the world go by....though these are slightly pricey! One of the cobbled streets off from the square - Rue du Taur leads down to the St Sernin Cathedral and has some good snack type restauants which are good for lunches. I lived in Toulouse for two years. I had a tough time at the start of my uni year abroad there, but couldn't keep away from the place after graduating. It's a place of contrasts. A very studenty city (except in the baking summer months when it slows down), the narrow, cobbled streets in the centre and the green banks of the river Garonne abound with people who wouldn't have looked out of place at Woodstock. Some are intentionally grungy, while others are real... er... tramps basically, making the most of the warm nights. Toulouse is a wonderful City that is often missed by the traveller. It is used by many skiers during the winter as a transit point for the Pyrenees or Andora. The city is a true contrast between ancient and modern. The ancient being the old town full of wonderful museums and quaint resturaunts. The modern being the new developments associated with the new industries moving into Toulouse mainly attracted by the presence of the Airbus Industrie facility. I spent the best 6 months of 24.5 years so far on this earth in Toulouse. I would move back there in an instant. It's a melting pot of cultures. French, naturellement, British (British Aeorspace is out there), Scandavian (there's a huge population of exchange students), Spanish, Italina, Eastern European and North African. The people are very friendly and the weather is fantastic. The city is situated on the river Garonne and it's absolutely beautiful, especially at sunset. Be sure to go to Pont Neuf.
