Advantages: Easy to freeze

Disadvantages: Can be difficult to grow all year round

I love the taste of fresh basil, but find it very tempramental to grow. I have tried a number of ways. I have bought ready planted pots in supermarkets, and what I expected to be a more durable version from the garden centre. I have even tried growing it from seeds.

The results have been extremely varied. Sometimes I am lucky and manage to produce a good crop. Last year I had so much that it seemed a shame to waste it, so I tried freezing it.

This was surprisingly successful and easy to do. (Simply wash and dry it and put it in the freezer). If you take the leaves out whilst they are still frozen, they are brittle enough to break, and you have chopped basil without any mess. It keeps its taste and texture, and you can use it as you would a fresh herb. It's particularly good in pasta sauces.

I did see an advert for frozen herbs some time ago, but haven't seen them in the shops. Perhaps there isn't a market for them - a much cheaper, and more organic way, is to grow your own.

I've never really had a problem growing Basil from seed, admittedly always in a greenhouse. For different flavours, try the purple variety, also lemon Basil which is particularly delicious.
