Borage ... prepared from raw vegetables. Borage can be used to make pureed soups. Borago officinalis or Echium amoenum is an annual herb originating in Syria, but naturalized throughout the Mediterranean region, as well as most of Europe, North Africa, and Iran. It grows to a height of 60-100 cm (2-3 feet), and is bristly-hairy all over the stems and leaves; the leaves are alternate, simple, and 5-15 cm (2-6 in) long. The flowers are small, blue or pink, with five narrow, triangular-pointed petals. It produces plenty of seeds and thus continues to grow and spread prolifically from where it is first sown or planted. In milder climates, borage will bloom continuously for most of the year.

Borage is a fantastic self seeding herb with beautiful blue flowers. It may be used as a "pot herb" ie added in reasonable bulk to savory dishes, mixed with spinach, and when chopped finely, added to salads or sandwiches. It is quite hairy but these hairs are not irritating to the mouth. The flavour of borage is similar to cucumber, and pea and borage soup is a classic combination! The flowers may be picked individually and frozen into ice cubes, they look very pretty in drinks. Borage /Borago/Boraginacea I pulled a couple of weeds up in my herb garden today and founds lots and lots of little tiny Borage seedlings so I thought I would write a little about borage As you have guessed borage self seeds easily I first seeded borage about 10 years ago in my garden have not needed to reseed it since. Borage originates from Central and Eastern Europe, where it grows in the wilds. Borage plants can grow up to eighteen inches in height about twelve inches in spread, and can be planted directly into the garden into rich soil. They prefer a sunny position, and because of their height and structure, they need to be well protected from the wind. However, do bear in mind that they are not hardy, therefore, must be removed to cover before the first frost.
