Advantages: Orange, Crunchy

Disadvantages: Go Mushy if Cooked too long.

A root Vegetable, the carrot is grown underground and is usually orange in colour, with the edible part being the long orange fleshy bit known as the taproot. Carrots are a very diverse vegetable, very healthy and great for consuming both cooked and raw.

Carrots go great in salads, not only to add colour, because bright orange does make for quite an attractive spectacle and not only for their great juicy flavour, which is very pleasant for a root and not as watered down as with similar vegetables but also for their incredible crunchy texture, which is very unique of commonly consumed vegetables.

The secret to cooked carrots in my opinion, is to not cook them to well, I quite like them slightly raw still, soft, but with a little bit of crunch. When served mushy, in my opinion, the true culture of the carrot is lost. I am well aware that some people prefer them mushy and whilst I find this hard to comprehend, Whatever floats your boat I guess.

Although somewhat an urban myth, Carrots do provide amounts of Vitamin A, a lack of which can cause poor vision, including poor night vision, so there is some truth here and it's another plus point for this most favourite of vegetables.

Summary: A popular favourite, inexpensive and very good for you.
