One of my husband's favourite herbs to eat. He likes to add loads of it fresh to his curries. I am not so keen on it myself. I do grow lots of it for my dearly beloved I like to keep him happy.
Coriander is an annual that grows 30-60 cms tall. Coriander has very pretty dainty leaves with aromatic leaves. In summer it has white /mauve flowers.
I usually have a pot on the windowsill in the kitchen ready to add to curries and salads. I usually grow my own but I have bought it from tescos in pots when I have none. I plant the coriander plants in my herb garden too after I have started them off inside in pots.
This is how I grow coriander.
I put peat free compost in a pot nearly filling it, and then sprinkle coriander seeds on to the soil. I then cover the seeds with 6-12 mm compost and then water I put the pots on my windowsill or in the green house and water regularly. I very rarely harvest the seed we seem to eat the leaves and not get to the seed stage. If I want to use seeds in cooking I usually buy some from the supermarket.


My favourite ways to use coriander.
The most use coriander gets in my house is as an addition to a leaf salad. I add a few leaves to the lettuce bowl it looks good and adds a different flavour.
I also add the leaves as a garnish to curries; Dearly beloved can never get enough of it.

I shall make this recipe when I pick my broad beans, they are nearly ready

Rice with broad beans and coriander
15 fL oz rice I usually measure mine in a measuring jug.
About 300g shelled broad beans, 8 tbs fresh coriander, 8 Tbs fresh parsley, 6 tbs melted unsalted butter, 8 tsp chopped dill 30g chopped spring onion tops

Cook the rice in a source pan. Cook the broad beans so they are still firm.
Put melted butter + 1 tbs water into a casserole dish put ½ the rice over the butter. Spread the broad beans over the rice. Sprinkle the herbs and spring onion tops over the beans. Spread t

emaining rice over the top of the beans. Pour 2 tbs butter over the rice
Have your oven at170%c gasmark3.
Put a lid over your casserole dish place in oven for 30 mins.
Check all is cooked. Serve with a garnish of coriander.

I like coriander as a flavour for cooked dishes such as curry but can't stand the leaves in salad - they taste like soap to me!
