Stinky breath, healthy heart (Garlic)

Disadvantages: Hard to find good quality garlic

Despite the adverse effect it has on your breath I do use a lot of garlic when I cook, the main problem in this country is getting hold of a good quality garlic bulb that actually has some tatse. Unfortunately the stuff you find in supermarkets is poor in this country, when it is in season at a local farmers market there is one seller who has some excellent garlic which I'm happy to pay the higher price for, this garlic has some nice juice to come out of it when crushed which is great for adding to sauces.

It is also lovely to finely chop and to add to acsserole and bolognese sauce. Garlic is also supposed to be good for the heart and I also make sure I eat lots before going to hot climes as it is supposed to keep the mosquito's away.

One of my favourite ways to use garlic is to finely chop it and then when roasting a chicken cut into the flesh and leae slivers of garlic in it so that it slowly permeates the meat while it roasts, I would also leave a bulb in the centre of the carcass as well, I also find that when roasting potatoes and parsnips adding a couple of garlic cloves gives it added flavour as well.
