I'm going to tell you about how I have my roast potatoes as my Fiance is potty over them, he'd have them with anything!
They are called Parliament potatoes, my Mum always cooked them when we had a roast dinner.
First you peel and boil the potatoes as you normally would making sure they are well cooked, so a knife will easily go into the potato and slip straight off.
Drain the water and then put the lid back on and shake them about to make them 'fluffy'.
Get a roasting tin with oil that has already been in the oven and carefully pour the potatoes in and give them a shake.
I usually have my oven on 180 - 120 and after 15mins I will stir the potatoes ensuring they are all covered in oil (a turkey baster is good for this) then the magic ingredient goes on - sage and onion stuffing, I always use Paxo.
So shake some stuffing all over and then put them back in the oven. Stir occassionally and re cover the oil and stuffing over the potatoes if necessary (you can add more stuffing too if you wish).
The potatoes can take up to an hour to cook nice and crispy depending on the heat.
They taste delicious and it makes them very crispy.
