Rosemary is a great herb that can be used fresh or dried and as with mint is fantastic with Lamb. The smell of Rosemary is very strong and stands out above a number of other herbs. Hence it is used a lot in home and perfume use. Rosemary originally came from the Mediterranean and is associated with improving the mind. Going by some of my opinions I guess not!! Rosemary grows to some 90cm in height and becomes quite bushy. It has a spiky fairly long leaf which flowers light blue flowers around March. The main problem with Rosemary is that it hates the cold and will be killed by frost. The plant needs to be in well drained soil and cut the top during late spring the plant will spread. Ideally it needs a sunny spot and if like me you have it against a wall it seems to thrive better. Rosemary is used in shampoos and for skin lotions and in the home for perfume reasons in furniture and polish. How to make a perfect join of Lamb – Get the leg etc and make cuts in it with a Knife. Into the cuts put cloves of Garlic and leaves of Rosemary maybe 5-6 per clove of Garlic. Rub the leg with rock salt and pepper and drizzle a little bit of olive oil over it. Make sure that you cook the lamb on a slow heat approx 160 deg C on gas for 2-3 hrs for a normal joint. Between the Garlic and the Rosemary the lamb is tender and very tasty.

- 10/03/01 Its very nice with new potatoes too. I grew some rosemary from seed last year - quite easy to do. I plan to do the same this year - you don't get a big bush, but you don't worry about it getting killed by the frost either! |

- 10/03/01 It's a good opinion. You obviously know your herbs!! As I'm vegetarian, I won't be trying it on the lamb, but it does sound nice!! |
