I love making soups as they are really easy and tasty and one of my favourite ingredients at this time of year is the Butternut Squash. A Butternut squash is a type of winter squash. It has a sweet, nutty taste that is similar to pumpkin. It has yellow skin and orange fleshy pulp. When ripe, it turns increasingly deep orange, and becomes sweeter and richer. It grows on a vine. Pumpkins ... They contain a high level of fibre, 3 grams in one cup as well as potassium which can lower hypertension. They generally weigh between 4-8 kg and I remember many years ago throwing the whole thing out on the 1st November! Disgraceful!
