It's been awhile since I've written an opinion about something I didn't think was very good, but occasionally an item comes along that just doesn't cut the mustard with me. This book is one of those very occasional items! Now, every week I bake cakes, five or six cakes at that, and no, they're not even for me, they're for other people. I sometimes get to try a piece, but never get to keep a whole cake. And believe me, when you make that many cakes the last thing you want to do is eat one. Anyhoo, I digress... Until recently we had a card to shop at Costco and usually ended up buying a tray of their delicious muffins. Towards the end of the year they had a selection of Mincemeat and Cranberry muffins, my husband and son loved the Mincemeat and I had the Cranberry ones. But as we stopped shopping at Costco I had to find a Mincemeat muffin recipe to make my own muffins. So when I spotted the Muffin Book as a prize on the Kingolotto site I decided to use my points and get the book. "Muffins Fast and Fantastic" by Susan Reimer was recommended to me as I have had problems making muffins that rise properly. This book has helped to remedy that and I think it's deservedly popular due to this. The book begins with a short introduction which explains why this is the third edition of "Muffins.." Susan Reimer also notes that she has added recipes and tips for gluten-free and wheat-free muffins. There is a short look at muffins in the UK and America and Canada to explain the background. I don't like cooking, I've never enjoyed baking, but I do...like eating. It was my two year old that finally coaxed me into the kitchen to 'make cakes'. Our results always ended up in the bin, but the fun was in the making...until I found this gem of a book in Lakeland Plastics, called Muffins, Fast and Fantastic by Susan Reimer. It's only £3.95 and has over thirty recipes for muffins (the American cake type of muffin, not the English toasting type!). This is one of the best and easiest recipe books it has ever been my pleasure to cook from. The book starts off with some excellent notes on muffin making in general and explanations on the results when using other flours/fats etc. There are 30 recipes to choose from with suggestions for many variations. The muffins use much less fat and sugar than traditional recipes so you can indulge without feeling guilty and they are also inexpensive to make.
