I don't like cooking, I've never enjoyed baking, but I do...like eating. It was my two year old that finally coaxed me into the kitchen to 'make cakes'. Our results always ended up in the bin, but the fun was in the making...until I found this gem of a book in Lakeland Plastics, called Muffins, Fast and Fantastic by Susan Reimer. It's only £3.95 and has over thirty recipes for muffins (the American cake type of muffin, not the English toasting type!). They include; Chocolate (of course), Orange-Carrot spice, Banana, Maple Syrup, Gingerbread, Apple Spice...and many more. The beauty is that a batch only takes about 10 minutes to prepare and about 15-20 minutes cooking time. Each recipe makes about 10 or 12 muffins. Another bonus...and I had to check before I bought the book, is that none of the recipes require an electric mixer - great for non-cooks. My toddler and I have tried about half a dozen or so of the varities so far and they are absolutely delicious! My relatives can hardly believe I made them myself (cheek!). The only thing you will probably have to invest in (or borrow from Grandma), is a deep fairy cake tin or a special muffin tin - otherwise - buy the book and have freshly cooked muffins whenever you fancy - they taste even better slightly warm. Not only are muffins the latest food fad, but they are also lower in sugar and fats than most cakes - cook a batch and you'll be hooked!
