When I became allergic to egg I found that buying things that did not contain egg somewhat frustrating. Eggs are used in so many things! I had to resort to making a lot of things myself and found Allergycare products very helpful.
This egg-free omelette mix is very versatile. It doesn't just make omelettes. I use it in many different things. For beaten egg I use a tablespoon of omelette mix to three tablespoons of water, mix well and then add it to cake mixes, biscuit recipes, pancakes, custards....anything you make with eggs, you can substitute egg-free omelette mix! The only thing it won't make is meringue! I did try this to make scrambled egg, but I was not too keen on the texture.
If you want to use it for an omelette, all you do is measure out the required amount of omelette mix, add the required amount of water and whisk well. Add seasoning. Heat your pan and add butter, pour in the mix and cook in exactly the same way as you would using eggs. It does tend to cook a bit quicker than egg though. When the base is cooked you can add whatever filling you want...grated cheese, cooked mushrooms etc and then when they are heated though, flip one side of the omelette over onto the other and slip it out of the pan onto a plate. Easy! The taste of the omelette is similar to one made with egg, though I wouldn't say it is the same texture (I loved eggs before I became allergic!) but it is a good substitute when eggs are off the menu.
The omelette mix makes great batter puddings too, so things like toad-in-the-hole and pancakes are back in our house. Yorkshire pudding does not rise as much as ones cooked with eggs, but it tastes the same and is quite crispy on the outside.
Sponge cakes made with this omelette mix turn out really light! They don't take so long to cook though, so you have to watch the timer on the oven.
So if you are like me and can't have eggs, you need never worry again. Allergycare can come to the rescue!
I do find this product hard to find in high street health shops but it is readily available online at places like Goodness Direct. It costs £2.98 for a 150g drum plus P&P.
