      A great gluten free alternative to ordinary Mexican

      I was diagnosed with coeliac disease at the tender age of four, and I'm really glad, because unlike coeliacs diagnosed in adulthood, I have no recollection of what food made from wheat products tastes like, meaning that I don't miss any particular foods. There are, however, a lot of foods out there that my friends love, that I've never tasted, and I'm keen to know what all the fuss is about!

      Mexican is one of these- you'll find very few gluten free meals in Mexican restaurants, so I've always felt a bit excluded from the world of fajitas and enchiladas, which my friends love. This kit was the answer to problems!

      Up until a few months ago, this kit was available in most supermarkets for around £3, although a quick look online makes me wonder if Discovery are still producing this all in one pack- it seems you may only be able to buy kits specifically designed for making fajitas, enchiladas etc, which is a real shame, but I'm sure the basic ingredients will be the same.

      This pack contains 8 corn tortillas, which you can either cook soft (in the microwave) or crunchy (in the oven) depending on the recipe you use, a small sachet of enchilada sauce (very spicy, so use sparingly!), and a sachet of fajita seasoning. On the back of the box it comes in are several quick and simple recipes for making Mexican meals, some involving mince (including an oven baked one), and, my personal favourite, chicken enchiladas. The recipes are really easy to follow, and you only need a couple of extra ingredients (chicken, onion and pepper in the case of the enchilada recipe). The products can be stored in a cupboard and have a long use by date, so it's really handy for having in stock.

      The result is a meal that I would happily serve to my gluten eating friends, as it is very tasty. Now I can see why they all rave about Mexican!
