Sandwich ... thought making a sandwich just meant taking 2 slices of bread and bunging something in between! However I ve just come across some tips which may come in useful if you are making sandwiches in bulk for parties etc? 1. Use fresh but not very new bread and make sure the slices aren t too thick 2. Allow 175g/ 6 oz softened & well- creamed butter for every 24 slices 3. Make sure the butter completely covers the bread slices. It acts as a waterproof barrier preventing moisture from fillings seeping through the bread and making them soggy 4. Prepare all fillings beforehand & make sure they are really well-seasoned. You will need the following: Petit Fours Cases 4oz drinking chocolate 4oz icing sugar 2 tablespoons (or thereabouts!) of rum 1 tablespoon of cream, top of the milk or evaporated milk Chocolate sugar strands All you have to do is to mix all the ingredients, with the exception of the sugar strands, together in a bowl to make a stiff paste.
