I dont really have measurements as I just chuck in what I feel. Shortbread- take 8 oz plain flour and 4 oz granulated sugar and mix. Rub in 4oz butter or margerine but for a better flavour use butter. Add some milk to make a dough and roll out to 1 cm thickness. Cut rounds out of this and put on a greased baking tray and bake gas 3 for 8-10 minutes. When these are baked set aside to cool. Chocolate Mousse- take good quality plain chocolate and melt in a bain marie or dish over a pan of water. While the chocol...

Start with 2 x 240g packs belgian waffles cut into pieces, roughly an inch square. Also chop up roughly 200g white chocolate. In a bowl mix a 500g tub of creme fraiche with a tablespoonful of flour and an egg. In an ovenproof dish, sprinkle half the waffle cubes and half the chocolate so it evenly coats the bottom. On top of that put half a 500g box of frozen raspberries or mixed fruits (still frozen!) Repeat keeping back a bit of chocolate to artfuly arrange on top in a minute. Then pour the creme fraiche mixture all over the berri...
