Easy orange cake (Baking)

All you need is a blender.
Ingredients
2 medium sized Valencia oranges
1 1/2 cups self raising flour
1 cup sugar
125 grams butter
2 eggs
Preparation
Melt the butter add sugar & mix with a stiff spatula
add the eggs and mix in
Wash the oranges, cut them into 8 pieces. Leave the skin on, just remove the pips.Blend the oranges to a homogenous pulp and stir into the the mixture.
Fold inthe flour. Transfer into a greased 8 x 8 baking dish and bake in a preheated to 180 degree centigrade oven. I use my toaster oven.
If you have a food processor, it's even easier. just throw all the ingredients in, starting with the oranges.
I like using a pyrex dish ( to which I have a lid) because I can serve from it as well. The cake is moist and stays fresh for several days ( if it's not eaten at once.)

Yes, you use the peel too. Your orange zest in one easy blend. You can substitute a lemon for one orange ( also using the peel). You can add up to 1/2 a cup of coconut, or chocolate chips. I gave the basic, but there is no end of variations on the theme. Try it
