eggless cakes for allergic boy (Baking)

Advantages: little boy had cake for first time in his life

Disadvantages: don't taste quite as good as ordinary cakes

I was wanting to use up some ingredients in my cupboards and was planning on making a cake – but realised I had no eggs. No problem I thought – I can make egg less cakes and give them to my friend whose child is allergic to eggs. He’s always getting left out when I make cakes as he can’t normally have them. Here’s what I did:-

Ingredients:-

• 225g (8 oz) self raising flour
• 2 tsp baking powder
• 175g (6oz) caster sugar
• 6 tbsp sunflour oil
• 250ml (9 fl oz) water
• 1 tsp vanilla extract

Method:-

1. Preheat the oven to 180°C and line a cake tray with cases.
2. Sieve the flour and baking powder into large bowl, stir in sugar
3. Pour in oil, water and vanilla. Mix well with wooden spoon for about 1 minute until mixture smooth, then divide between the cake cases
4. Bake in preheated oven for about 25-30 minutes until the center springs back when lightly touched
5. Place on wire rack to cool

As I made these for a little boy I also decorated them with various things – chocolate spread, jam etc, but they could also be left plain. Or have chocolate chips or raisins inside them
