This is a quick and easy recipe that I came up with these tasty bean burgers after putting together a few ingredients and for an alternative to normal meat burgers. It takes no time to prepare and is very healthy and nutritious. You can either bake these burgers on a medium heat in the oven or in the summertime they are great barbequed. A recipe that takes minimum effort with maximum taste. I hope you enjoy it.

Preperation time: 10 mins
Cooking time: 20 mins
Quantity: 6-8 small burgers

Ingredients

*1 tin of black eyed bins (discard the water in the tin)
*1 medium sized onion finely chopped
*1/2 red pepper, diced
*1 cup of fine breadcrumbs
*1 tablespoon of mixed herbs
*Tomato puree (just a squirt)
*1 egg
* Plain flour for rolling
* Mixed spices (a pinch)
* Salt according to taste

Method

1. Mash the black eyed beans in a bowl
2. Add the onions to the bowl and mix all together
3. Add in the breadcrumbs continuing to mix, then add the mixed herbs, tomato puree, spices and salt, make sure the mixture is even and all the ingredients have been thoroughly mixed.
4. Mix one egg and add to the mixture in the bowl. After the egg has been mixed with all the other ingredients take small handfuls of the mixture and rollout onto flour in order to make small burger shapes.
5. Place burgers on a heatproof tray and place into an oven and cook for around 10 minutes on each side.

Summary: These bean burgers make a great afternoon snack or a part of a main meal, they are very healthy.

Would be good to have some more comments on the process - the last time I made bean burgers they were very crumbly and hard to form into proper patties; did you find that with these, for instance?

Also ... I know you say to 'bake' them in the oven, but I'd be looking for cakes under this heading!
