Chocolate cake for the health concious ?!! (Baking)

My teenage son is the Banana King! He could eat several in a day, which makes me mad. I buy a bunch and 5 minutes later they're gone. However there is something that makes me even more angry - that's bananas left going black. He may love this potassium filled stick of goodness, but he is very fussy over their ripeness. He prefers them to be on the green side and sometimes they get left to go squishy in the fruit bowl. So what do you do with over ripe bananas? Now we are officially in recession we mustn't throw anything away!

So here's my 'waste not want not , recession busting recipe for Banana Chocolate Loaf. This is a lovely rich chocolate cake with added goodness. A chocolate cake for the health concious?!

You will need .....

165g (5 ½ oz) butter or Marg
165g (5 ½ oz) Light brown Muscovado sugar
165g (5 ½ oz) Plain chocolate ( I usually use Tescos own)
2 ripe bananas mashed
3 eggs beaten
200g (7oz) Plain Flour
2 tspn Baking powder.

A 2lb Loaf tin greases and lined

To Make .........

Melt the sugar, butter and chocolate in a bowl over a pan of boiling water.
Add the bananas and eggs - this looks very sloppy.
Stir in the flour and mix to a smooth batter.
Pour mixture into the loaf tin.
Bake in a moderate oven foe about 1 hour (my oven only takes about 45mins on 170 degrees )
Turn onto cooling rack.

This cake is lovely as it is, but even better with extra melted chocolate or even chocolate fudge icing smothered all over the top !!

Go on get baking!

This sounds great - I've been looking for a new chocolate cake recipe. Seeing as though it's my birthday tomorrow I'm going to give this a try!
